Kathrikai Bajji (Mashed Brinjal/Egg plant)
Hmm.... how I wish I get some more time to blog. I do read a lot of blogs..its just that i dont get the time to compile things....but again, I promise to myself (asusual !!!)...that I will find and allocate some time to do this....
Anyways.. here is one another recipe ...Kathrikai Bajji...This again is a traditional south-Indian dish..may be with a little variations here and there...its quite a easy one to do and really yummy for egg plant lovers...
Ingredients :
1. Brinjal / Eggplant - 2
2. Onion (chopped fine) - 1 cup
3. Tomato (chopped fine) - 1 cup
4. Garlic - chopped fine - 2-3 flakes
5. Turmeric pdr - 1tsp
6. Chilli pdr - 2 tsp
7. Salt to taste.
First Chop the onions, garlic and tomatoes fine.
Saute a little mustard and add the garlic and onion. Fry until the onions become translucent. Add the turmeric powder and saute some more. Once the onions have been fried well....add the tomatoes and continue frying. Add chilli powder, salt. After 5 minutes, the tomatoes will change shape and would have merged with the gravy. Thats the time to add the brinjals....Fry for a minute and then add little water and close the pan with the lid. Simmer and allow it to cook well.
Once the brinjals have cooked well, take any ladle with a flat base..and mix the gravy so that the cooked brinjals get mashed. Serve Hot.
This is a great dish with idli or dosai...

the curry looks delicious. As far as the ingredients are concerned I always have a hard time to find up here. but thanks to my friend john miller who introduced me to a great resource and i thought that i pass great along as well.
